Although I find the comparison and analysis interesting, some things seem a little mixed up. Although I will say that Kyoru is the BEST!!

avatar/shoujo will LOVE Furuba. Its my favorite show...EVER (and that's saying a LOT next to avatar). It's another one of those love-triangle things with a really interesting fable-based core.
Really good job regardless though! ^_^

Let's get a few things straight.
First: Tohru is kinda between the two guys almost from the very beginning.
Kyo never was a bad guy she hated or something like that. Yuki and Kyo were more or less equal friends/potential lovers to her.
Second: Yuki sees

Tohru as a mother. Aang clearly doesn't see Katara that way.
Tohru on the other hand sees him as a "man" and potential love interest.
That's the other way round as Zutarian theory wants Kataang to be, isn't it?
So you're contradicting yourself.
Third: Kagura is with Kyo for selfish reasons and is stalking him and getting on his nerves.
Where are here the similarities to Maiko?
Or did you miss that Zuko loves Mai and that Mai loves Zuko more than anything else?
And last but not least:
Fruits Basket is a Shoujo Manga.
It's all about romance with some nice story to it.
So the question: Which boy will she choose? is a large and important part of the plot.
Avatar on the other hand is LOTS of plot with a nice bit of romance.
It's NOT about: Which boy will she choose?
Besides, if there should be such a twist, you might notice that Tohru is the main character and so her love choice is the most important one.
So AANG had to be the one who's in between, not Katara.
Whatever. You think that Zutara already happened in Fruits Basket?
Wonderful. Watch it. =)
What do you still need Avatar for?
If it's just the same ol' plot again, why bother watching it?
I mean, I knew it, Avatar is like the sequel of Fruits Basket. Only with other names.
Lame.
But if there are so many other movies and shows that end like Zutara, the possibility is of course EXTREMELY high that Avatar will take the same turn.
That's why Zutara is so original, isn't it?
There are plenty of villain-is-changed-by-and-gets-the-girl stories out there, we desperately need another one.
So: don't just watch Pride and Prejudice, Furuba, The Beauty and the Beast and all the other "Zutara" movies/shows out there.
Because... that would be... rational, wouldn't it?
And love defies logic.
So by defying all logic, you end up with the one true Avatar ship.
Well, then it has to be Zutara.

I'm not trying to flame or anything, but to be honest, I really don't see how Kyo/Tohru = Zutara. First off, Katara and Tohru although they may have similarities on being sweet and motherly, there is a big difference with them. When Katara is betrayed,

she usually holds a grudge while Tohru on the other hand does not.
As for Yuki being Aang, I don't see anything similar between them either. Also comparing Kagura/Kyo with Maiko is very far fetched. Kyo never had romantic feelings for Kagura, but Zuko does have feelings for Mai.
Also, Kyo and Tohru hae had a lot of positive interactions in the series, while Katara and Zuko haven't had many. I do see how someone can see Kyo/Tohru= Zutara, but I still think the comparsion isn't very accurate.

The "love as a mother" thing between yuki/tohru comes into play in a big way in the manga.
