This is the final video I prepared for our beloved Terri's funeral. Her beautiful sister eulogized a poem entitled "The Dash" which I used in this video. The poem is as follows:

I read of a man who stood to speak
at the funeral of a friend.
He referred to the dates on her tombstone
from the beginning ... to the end.

He noted that first came the date of her birth
and spoke of the following date with tears,
but he said what mattered most of all
was the dash between those years.

For that dash represents all the time
that she spent alive on earth
and now only those who loved her
know what that little line is worth.

For it matters not, how much we own,
the cars ... the house ... the cash.
What matters is how we live and love
and how we spent our dash.

So think about this long and hard;
are there things you'd like to change?
For you never know how much time is left
that can still be rearranged.

If we could just slow down enough
to consider what's true and real
and always try to understand
the way other people feel.

And be less quick to anger
and show appreciation more
and love the people in our lives
like we've never loved before.

If we treat each other with respect
and more often wear a smile ...
remembering that this special dash
might only last a little while.

So when your eulogy is being read
with your life's actions to rehash,
would you be proud of the things they say
about how you spent your dash?  less

This was my favorite; in a description of what love means to me; I wanted to carry this over to remind us all to love one another :) Love to me can be found in the whisper from a friend, the touch from   more...a loved one, and the gentle kiss from a child. I find it daily in my husband, children, grandchildren and my friends.  less

This little boy reaches out for others, just look at his most current accomplishments:

1. Angel participated at palm fest, singing at the Lonesome Dove stage.

2. He preformed "God's Will" by Martina McBride, and "When You Say Nothing at All" by Keith Whitley.

3. At palm fest Angel sold jewelry and sold close to $600; he donated 50% of the sale to a noble cause. He donated the money to a young boy from La Joya that needs a surgery.

4. Angel will perform at the McAllen convention center on October 25 at 6pm at a car show, Angel will be representing the Make a Wish Foundation, and will also donate a jewelry set that will be auctioned with the proceeds going to Make a Wish Foundation.

5. He will sing in Houston at a family private party on October 26, 2007.

6. Angel will be honored at Memorial High School in McAllen November 1st at the parade, and on 2nd at the football homecoming game.

The musical score is Angel's own voice, singing "God's Will" and PappyStu was gracious enough to allow me to include his heart felt poem, "How Many Sunsets".

Today is August 19 - 3 years to the day my mother passed away. In her honour I prepared for my family (and you) one of her dishes, corned beef hash. This is a family favorite.

Recipe:

6-8 medium red potatoes,   more...chopped
1 very large sweet onion, chopped
1 can corned beef hash
salt & pepper to taste
SW spice - optional (or chili power, chipolte, etc)
light flavored olive oil
pat of butter

Clean and cube potatoes and sweet onion uniformly in size; place in pan and drizzle light tasting olive oil w/pat of butter and mix it up. Saute' on medium to low until the potatoes are crisp on the outside and fork tender on the inside, and the onion translucent, stirring often.

Add corned beef and mix, add spices to taste and adjust spices if needed.

Serve mounded on a plate topped wih an egg cooked to your liking. I prefer the yolk running so it will drizzle with the potatoes and onions.

This is a wonderful easy and refreshing recipe. I like to use my electric meat grinder (a Waring Pro) for the texture it gives this dish. the recipe used in this video is:

1 - 2# block of good quality   more...mild cheddar cheese

8 ounces pimento (I like Rolands whole pimentos, then I give them a rough cut)

1/4 C (approx) mayonnaise - just for creaminess.

I also added a splash of the pimento juice while grinding.

Directions:
Cut the cheese into chute size pieces and give the pimento a rough cut (if you used whole). Alternate feeding the chute with cheese and pimento. I begin and end with cheese, then add just enough mayo for a creamy texture - but not overbearing. You don't want the mayo to override the flavors.

Serve atop crackers or stuff celery - use your imagination. It's good on top of dry toast, too. This is excellent to serve at parties. My kids like to swipe the cheesespread and make sandwiches out of them! Enjoy!

Here's a definition, "pimiento; pimento A large, red, heart-shaped sweet pepper that measures 3 to 4 inches long and 2 to 3 inches wide. The flesh of the pimiento (the Spanish word for "pepper") is sweet, succulent and more aromatic than that of the red bell pepper... This is my very first food video! This recipe is in response to samsarajade's own sausage rolls! Mine are a little different and have a southwestern twist. Recipe follows (of course, I quadruple it for   more...a bunch o' hungries):

1 pkg refrigerated crescent rolls (8 oz)
1/2 pound bulk sausage (I like Jimmy Dean)
2 stalks green onion, chopped thinly
SW spice to taste (or use chili powder)
handful shredded cheddar cheese
egg wash

Unroll dough on lightly floured surface pressing seams and perforations together (or as best possible - a few holes looks kinda cool). Add ingredients and roll up from long side; cut into 1/2 to 1 " slices; Place cut side up in ungreased baking pan, brush on eggwash and bake at 375 degrees for 12 to 16 mins or until golden brown.
